ALLwell kits are based on Sandwich-ELISA and are the most used and accepted worldwide for testing in food industry. In this method the specific allergen in the sample extract is captured by antibodies attached to the plastic wells of a microtiter plate. After washing, a second antibody (conjugated to HRP enzyme) is added binding to the allergen. When an appropriate chemical substrate is added HRP converts it into a colored solution: allergen contamination is then proportional to the intensity of the color.
